Strawberry-Ginger Beet Smoothie Recipe

A little tangy. Creamy. With a bit of a hot bite. Gently sweet. This smoothie is pretty delightful. But just be sure that you brush your teeth before going out into public. Otherwise, the luscious redness of strawberries and beets will have you looking like a feasting vampire. =-)

Strawberries are one of those yummy fruits that are, sadly, highly sprayed with pesticides and herbicides.

Personally, I avoid buying conventional strawberries, and I recommend that you become equally choosy. Strawberries are just one of those fruits that you should purchase organic.

In most cases, frozen strawberries are lower in price than fresh. And if you really love strawberries, consider growing them next year. (They so easy to grow!)

You will obtain a creamier, smoother texture if using a strong blender (I use a Vitamix), especially for managing raw beets or frozen berries.

Five-Ingredient Strawberry-Ginger Beet Smoothie:

  1. 1 medium beet, quartered (scrub well and trim top and bottom.)
  2. 1/2 cup strawberries
  3.  1/4- inch scrubbed, unpeeled ginger (use more if you like a KICK)
  4. 1 tbsp lemon-flavored fish oil or flaxseed oil (anti-inflammatory and YUMMY)
  5. 1 cup milk of choice. (You will probably need to increase the liquid content, especially if adding additional ingredients).

Awesome bonus additions (choose any of the following):

  1. Add celery (the pale, smaller stalks found toward the center taste the best in this smoothie).
  2. Add 1/2 an avocado.
  3. Add 1/2 cup cucumber.
  4. Add 1 serving of high-quality protein powder, especially if your smoothie is a meal replacement!
    1. Try organic grass-fed whey protein powder; (my favorite!)
    2. Try RAW organic whey protein powder;
    3. Try vegan protein powder (awesome for vegans)

Directions:

  1. Clean all ingredients.
  2. Combine items in a strong blender (or chop your ingredients well).
  3. Add water until blender is appx. 3/4 full with water or your favorite milk. You can start off with less water and gradually add more as you see fit (depending on the consistency you like).
  4. Blend until smooth. It will vary, depending on the strength of your blender.
