Vegan Hot Chocolate is For Lovers

One reason winter is nice is because it gives me just one more reason to drink hot chocolate. One of my favorite things about being a vegan is how my hot chocolate kicked up several notches! You think I miss the milk, sugar, and cream? Not so. I feel that what I drink now is leaps and bounds better than all the processed, refined boxed and canned mixes of my past combined. I even make my vegan hot chocolate for potluck parties and it’s always a hit. I am more of a hot chocolate lover now than ever, and my household requests this for dessert quite often, because it’s just so dreamy. Although I didn’t come up with this recipe myself, (I just combined popular vegan ingredients), this is what I concoct on cold wintry nights when this divine chocolaty drink is calling my name.

Divine Vegan Hot Chocolate

(All measurements are very approximated so find what works for you)

Mix together in a pan on medium low heat until everything is melted, hot, and a good consistency:

2 cups almond milk

1 can coconut milk

1 T coconut oil

1/3 to 1/2 cup raw cacao powder (depending on how chocolaty you like it)

1/3 cup raw honey or 1/4 cup agave

3 drops peppermint essential oil (optional, but it’s delicious, I promise)

Enjoy, hot chocolate lovers!
