BITCHIN’ Three – Minute Banana Creme Pie

Put the store-bought natural pies to crying shame while wowing your dinner guests with this bitchin’ dessert.  Please run – don’t walk – to your kitchen to whip this up!

This is the fastest, easiest damn pie I’ve ever made.  It excels at being highly palatable, yet low-budget, whole foods dessert. It is free of preservatives, dyes and artificial ingredients. It is crust-free and contains no added sugars. And it’s likely that the only ingredient you are missing for this is the heavy whipping cream.

Serves 2 very happy people.

 

Whipping the cream takes about 1-1/2 – 2 minutes with a hand blender. Whipping while taking photos takes longer.

 

Bananas provide a lot of sugar on their own, so I didn’t add any sugar. However, you can add a little honey or maple syrup if you think it is needed.

 

Sprinkle a bit of spice on the bananas and add a dollop of homemade whipping cream!

 

Ingredients:

  1. 2 ripe bananas (not over-ripened)
  2. Heavy whipping cream – about 1-1/2 – 2  cups
  3. Vanilla extract*
  4. Chopped nuts (such as walnuts, almonds, macadamias, or pecans)
  5. Cinnamon or cardamom
  6. Optional: Honey or maple syrup (please use local honey, not the conventionally produced stuff.)

* When you use a high-quality real vanilla bean extract, you will find that you don’t need to add sugar. Add enough of it to satisfy your taste. For me, a couple of tablespoons in this recipe was plenty.

Equipment needed:

  1. Medium bowl for whipping
  2. Hand blender

Process:

  1. Add whipping cream to bowl.
  2. Add about 2 teaspoons vanilla extract and taste. Add more until you think the flavor is good. Vanilla helps reduce or eliminate the need for added sugar.
  3. Using hand blender, whip cream about 1 minute, or until it reaches desired consistency. Avoid over-whipping the cream, as it becomes stiff and reminiscent of butter (it’s not yummy when you feel like you are chewing the whipping cream). If you are uncertain about your skills, just test the cream every 20-30 seconds as you whip it. Incorporate all the cream into the whipping process.
  4. Peel and slice bananas into 1/4″-1/2″ thick wheels. Place wheels equally into two bowls.
  5. Sprinkle to taste with cinnamon or cardamom (or both).
  6. Top with a dollop or two of whipping cream. If you have any leftover cream, save it for a morning coffee, if you’d like.
  7. Sprinkle with chopped nuts.
  8. If desired, drizzle maple syrup or honey lightly over the whipping cream.
  9. Give thanks and praise to the cows, bananas, spices, farm workers & plantations, earth, fossil fuels, and beyond.
